How To Make & Sell Stuffed Cupcakes

Why Stuffed Cupcakes Are Trending & If Your A Fellow Cake Business Your Might Like To Know Why Customers Will Pay More For Them!

Stuffed cupcakes are one of those techniques that seem impressive to customers but are actually very simple to produce once you know how. Recently I’ve seen a huge shift in what customers want from cupcakes. They’re no longer just looking for something pretty. They want indulgent, generous, exciting cupcakes that feel like a treat worth paying extra for.

A hidden filling instantly elevates a cupcake. Whether it’s jam, Nutella, Biscoff, buttercream, or sprinkles, that surprise centre turns an everyday cupcake into a premium product. This makes stuffed cupcakes perfect for parties, celebration boxes, corporate orders, and gift sets.

I’ll walk you through exactly how to:

🧁 Make stuffed cupcakes properly with a variety of fillings.

🧁 How to stop them leaking.

🧁 Which fillings work best.

🧁 Those of you with a cake business how to price them so they increase your profit, not your workload.

Why Stuffed Cupcakes Are Trending

I use to make them as a child filling them with all kinds of treats, but now they have made a come back. Stuffed cupcakes are everywhere and there’s a good reason for it.

• They feel indulgent and generous

• They photograph beautifully for social media when sliced neatly in half!

• Customers love a surprise centre

• They justify higher prices

• They are easy to customise

From a business point of view, they tick all the right boxes. You use a small amount of extra filling, but customers happily pay more because the cupcake feels more special.

Best Fillings for Stuffed Cupcakes

Not all fillings are created equal. The best fillings are thick, stable, and flavour-packed.

Reliable options include:

• Jam (strawberry, raspberry, cherry, apricot)

• Nutella or chocolate spread

• Biscoff spread

• Salted caramel

• Thick buttercream

• Chocolate ganache

• Buttercream mixed with sprinkles

• Marshmallow fluff

TIP: Avoid very runny fillings unless they’re thickened, as they are more likely to leak to your cupcake class and spoil your cupcakes entirely!

Sprinkles & Small Sweets! 🍬

Adding small sweets and sprinkles to the centre of cupcakes is a simple way to create surprise, and extra value. A hidden mix of mini marshmallows, chocolate chips, sugar pearls, or pastel sprinkles gives that satisfying crunch or melt-in-the-mouth moment when the cupcake is cut open. These fillings are inexpensive, quick to add, and don’t require extra skill, yet they instantly elevate a standard cupcake into a premium-style bake.

They’re especially popular for children’s parties, celebration boxes, and social-media-friendly “cut open” reveals, making them a smart option for boosting perceived value without increasing your time or costs.

Tools You Need

As always with cupcake decorating you don’t really need expensive equipment, but the correct tools do make the job quicker and neater. So if your going to create some fabulous stuffed centred cupcakes I would suggest:

Essential tools:

• Cupcake corer or small sharp knife

• Piping bags (keeps things neat)

• Plain round nozzle or cut piping bag

• Teaspoon or small spoon

• Palette knife

How ever if you're going to be making a lot of these style cupcakes a cupcake corer gives the most consistent result and helps prevent over-cutting the cupcake.

How to Make Stuffed Cupcakes (Step by Step)

  1. Bake your cupcakes and allow them to cool completely. (as always)

  2. Core the centre of each cupcake, removing a small plug. (not too deep)

  3. Fill the hole using a piping bag or spoon.

  4. Do not overfill. Leave space at the top.

  5. Replace a small piece of the cake plug to seal the filling, remove anything that overflows.

  6. Decorate with buttercream or fondant as usual.

That small cake ‘lid’ is key. It helps prevent the filling from pushing up into your decoration.

How to Stop Stuffed Cupcakes from Leaking

Leaking is almost always caused by one of three things: overfilling, thin fillings, or cutting too much cake away.

Top tips:

• Use thick fillings

• Never overfill

• Always cap with a little cake

• Chill briefly before decorating if needed

• Don’t core too deeply

If you follow these steps, leaking should not be an issue.

Can You Freeze Stuffed Cupcakes?

Yes, most stuffed cupcakes freeze very well.

Cupcakes filled with jam, Nutella, Biscoff, ganache, or buttercream can be frozen before decorating. Wrap them well and defrost at room temperature while still wrapped.

Avoid freezing cupcakes with fresh cream or very wet fillings.

Freezing stuffed cupcakes can save you a huge amount of time when preparing for large orders.

Pricing Stuffed Cupcakes

If you're looking to enhance your cake menu consider adding stuffed cupcakes.

A simple pricing structure works best, this is an example for my clients in London, yours of course may differ depending on your customers and area of business.

Example pricing:

• Standard cupcake: £3.50

• Stuffed cupcake (jam or buttercream): £4.00

• Premium filling (Nutella, Biscoff, salted caramel): £4.50–£5.00

For boxes:

• Box of 6 standard cupcakes: £21

• Box of 6 stuffed cupcakes: £24–£27

• Premium mixed box (luxury fillings): £30+

You can also offer:

• One included filling, upgrades charged extra

  • Baby gender reveal with blue/ pink fillings

• ‘Surprise centre’ boxes at a premium price

• Seasonal limited-edition fillings

Customers rarely question this pricing when it’s clearly explained.

Why Stuffed Cupcakes Increase Profit

Stuffed cupcakes require only a small amount of extra filling, but they significantly increase perceived value. This means:

• Higher price per cupcake

• Better margins

• Easier upselling

• Stronger social media content

They are one of the simplest ways to raise your average order value without adding complexity.

Stuffed cupcakes are easy to make, exciting to sell, and perfect for customers who want something that feels special. With the right fillings, correct technique, and confident pricing, they can quickly become one of your most profitable products.
