Red velvet is a timeless favourite – soft, moist, with a hint of cocoa and that gorgeous deep red crumb. The best part? This recipe works beautifully for both cakes and cupcakes. Whether you’re baking a layer cake for a celebration or a batch of cupcakes to share, you’ll get deliciously consistent results every time.
Ingredients
For the cake:
250g (2 cups) plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
1 tbsp cocoa powder
½ tsp salt
200g (1 cup) caster sugar
120ml (½ cup) vegetable oil
2 large eggs (room temperature)
1 tsp vanilla extract
1 tsp white vinegar
240ml (1 cup) buttermilk*
2 tsp red food colouring (gel recommended for best colour)
TIP: If you don’t have buttermilk, mix 240ml milk with 1 tbsp lemon juice or white vinegar and let it sit for 5 minutes.
For the cream cheese frosting:
250g full-fat cream cheese (cold)
100g unsalted butter (softened)
400g icing sugar (sifted)
1 tsp vanilla extract
Method
Step 1: Preheat
Heat your oven to 170°C (150°C fan) / 340°F.
Line two 8-inch cake tins or a 12-hole cupcake tray with cases.
Step 2: Mix the dry ingredients
In a bowl, whisk together flour, baking powder, bicarbonate of soda, cocoa powder, and salt.
Step 3: Mix the wet ingredients
In another bowl, beat sugar, oil, and eggs until smooth.
Add vanilla and vinegar. Stir in the buttermilk and food colouring.
Step 4: Combine
Gently fold the dry ingredients into the wet mixture until just combined (don’t overmix).
Step 5: Bake
For cupcakes: divide batter evenly between cases and bake for 18–22 minutes.
For cakes: pour batter into tins and bake for 25–30 minutes, or until a skewer comes out clean.
Allow to cool completely before frosting.
Step 6: Make the frosting
Beat butter until light and creamy.
Add cream cheese and vanilla, then sift in icing sugar gradually, mixing until smooth and fluffy.
Step 7: Decorate
Spread or pipe frosting over cooled cupcakes or cake layers.
